2017 Fall Culinary Classes Scheduled at the Southwest Virginia Higher Education Center

 

(Abingdon,VA)   Cooking Along The Crooked Road, a culinary program at the Southwest Virginia Higher Education Center, announces the line-up of fall culinary classes. Taught by local chefs and accomplished cooks, these non-credit, hands-on enrichment classes are open to the public.  Classes will be meet in the culinary kitchen at the Southwest Virginia Higher Education Center in Abingdon.  Participants will enjoy sampling what they have prepared during class.  Classes are $35.00-45.00 each and usually meet on Monday nights from 6pm-9pm.  Youth Classes meet on Saturdays.  To see a complete description of these culinary classes, prices and to register online, please visit:  www.swcenter.edu/cooking or, call 276 619-4300.  Spaces are limited.

 

Tailgate Grilling the Easy and Delicious Way                                          Monday, September 11                                    Matt Shy from Mellow Mushroom will be here to give you some peace of mind and share delicious and simple items that can be done on a small grill at any venue!  Gather new recipes from chicken skewers with 3 sauces to foil packets of meat and veggies, sides…even grilled desserts.  Pick up ideas on packing food safely for transport and some beers that are perfect to pair for a tailgating success!

Join Sheridan Nice of Mona Lisa’s for a look at the Traditional Thai Cooking with a few twists as she leads the class in preparing a meal using some of the her favorite recipes. Explore the unique ingredients, simple techniques and occasional fiery recipes of one of the most distinctive cuisines of Southeast  Asia.

Nordic Cookery                                                                                  Monday, September 25                                                                                      Join the Tavern and Steve and Morgan Gilbert for a unique culinary experience with this trend-setting Scandinavian cookery. In this innovative cooking, fresh fish, root veggies, grainy breads, nuts and wild game showcase what is available to share at the table.  Learn to make a special Scandinavian drink to add to the feast!

The Tuscan Kitchen                                                                                 Monday, October 2                                                          Chef Susie Buckner has the most creative ideas when it comes to entertaining and making a beautiful table.  During this class she will combine her talents to create a very special fall Tuscan meal from appetizer to dessert, including homemade pasta!  Her favorite Italian wine will be paired with dinner.

As American as Apple Pie! A Columbus Day Celebration                 Monday, October 9                                                            Fall brings us thoughts about apples which are a truly American-based fruit.  Master baker, Francine Ivery will share some of her favorite ways to bake with apples.  From homemade sour cream apple pies to fresh apple bread, apple dumplings and more, you will collect fabulous new recipes just in time for the holidays!                                                                                                                                                      

 

 

Another Taste of Morocco                                                           .        Monday, October 16                                                        Chef Matt Henry from 128 Pecan is back for another spicy class with new and delicious Moroccan dishes.  If you missed our last class, grab a spot to learn why this mysterious cuisine is so important in the culinary world.  And take home some healthy and exotic recipes to try at home!

 

The Flavors of Sicily                                                                               Monday, October 23                                                                            Susan Lachmann of “Women on Air” loves nothing more than sitting down with good friends and good conversation before the meal.  Sicilian Cooking begins with the sea.  Fresh, wholesome and flavorful describe a Sicilian meal. Susan will take you from start to finish through a typical Sicilian meal  Mangia!

Traditional Indian Cuisine                                                                      Monday, November 6                                                                  Anna Hawkins and sous-chef husband, Drew bring the incredible, complex and delicious flavors of Indian cooking to the teaching kitchen. Anna will walk you through the steps of making several signature Indian dishes from scratch as you learn about the various spices and how to apply heat at different phases of the cooking process to bring out flavors.

Versatile Puff Pastry:  Savory and Sweet                                             Monday, November 13                                  Afraid of working with puff pastry thinking it is out of your realm?  Well, no more fears!  Join Donna Barrow, owner of Wild Flour Bakery to learn her secrets for making perfect filled croissants, puffs and other delicious sweet and savory appetizers and treats that will wow your guests and family over the holidays!

A Taste of Heartwood:  Soups with Flavor and Flair                           Monday, November 27                     Heartwood’s Chef Charles is all about soups.  We know this for a fact because he has been a winner at the Great Winter Soup Cook off!  Join him for any evening of soup making in time for chilly weather.  Learn the basics from start to finish, including how to make your own bone broth for health and take home some of his favorite recipes for winter cooking.

Macaroons and Meringue:  Mystery Solved                                           Monday, December 4                                         Join Susan Mole to debate and discuss the best ways to make the ever popular Macaroon. Students will eat their way around the world with meringue desserts:  Australian Pavlova; Frehcn Roulade and English Eton Mess as well as learn to make meringue mushrooms, an absolute necessity for your Buche de Noel!  The sweetest class of the year!

Let’s Get Jolly: Holiday Appetizer and Wine Pairing                              Monday, December 11                                                    Matt Henry from 128 Pecan is back in the kitchen for another fabulous pairing and just in time for the holidays.  Do you have trouble finding the perfect wine to serve with appetizers or holiday feast?  Holiday time is hectic and Matt has a knack for coming up with perfect wines to pair with creative, simple and flavorful appetizers to wow your family and friends!

 

 

 

 

 

 

 

 

YOUTH CLASSES

Halloween Monster Cookies and Edible Critters:  Things that Go Bump in the Night          Saturday, October 28  10: am    Kids, ages 6-10, can gather with childhood educator, Susan Lachmann for a fun and creative morning as she helps them create some cool edible critters as well as a swampy punch!  The class will bake and ice monster cookies.  Susan will get the creative juices flowing by unleashing all that imagination using foods!

Edible Art and Fun with Food (ages 11-15)                                                                                 Saturday, October 28 1:30 pm Enjoy an educational and artistic afternoon with educator, Susan Lachmann, host of “Women on Air” who will introduce new skills and push creative buttons by letting students design some cool critters, food pictures, spooky food folks and more. Students will learn about healthy choices and fun ways to make that broccoli take on a new form.  A lively Jr. Iron Chef competition completes the day!   

Teens Cook!  Holiday Part Foods and Gifts from the Kitchen                                                 Saturday, December 9   9am Teen Chefs report to the kitchen to start sizzlin’!  Matt Shy of Mellow Mushroom will lead a mini-teen camp concentrating on foods teens can prepare for parties and family over the holidays! Plus, some cool “foodie gifts” to take home for presents!
